Slow Cooker Chicken Cacciatore

1/4 cup Zesty Italian Dressing
3 Boneless, skinless chicken breasts
1/2 med onion, cut into strips
2 med green pepper, cut into strips
2 tsp minced garlic
1 can (14.5 oz.) crushed tomatoes
1 tsp. Salt
1 tsp. dried thyme leaves


Heat dressing in large skillet on medium-high heat. Add chicken, in batches; cook 2 to 3 min. on each side or until browned on both sides. Place onions, peppers and garlic in slow cooker; top with the chicken. Combine tomatoes, salt and thyme; pour over ingredients in slow cooker. Cover with lid. Cook on LOW for 6 to 8 hours (or on HIGH for 5 hours). I serve chicken mixture over white rice.

Broiled Parmesan Tilapia


1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets

Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside. Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

Diet Wild Cherry Pepsi Cake

1 12oz can Diet Wild Cherry Pepsi
1 box chocolate cake mix
1 egg

Mix above ingredients and back according to the box. You can use any flavor of soda. Top with cool whip or Chocolate Glaze (recipe below). :)





Chocolate Glaze

2 cups confectioners sugar
2 tbsp chocolate powder mix
1 tbsp butter, melted
1/2 tsp vanilla
4 tbsp milk

Mix all ingredients till smooth. Drizzle over cake.

Baked Chicken Parm


Baked Chicken Parm:

3 Chicken Breasts
1/2 cup Italian Bread Crumbs
1/4 cup French's Fried Onions
1 cup spaghetti sauce
1/4 cup shredded cheese


Preheat oven to 350. Mix bread crumbs and fried onions in a ziplock bag. Add one piece of chicken to mixture and shake. Place chicken in a baking dish. Repeat with remaining chicken. Bake for 30 min. Top with spaghetti sauce and cheese and bake for 10-15 min. I served it with green beans and a side of pasta. Enjoy :)
