Breakfast Scramble

My "go to" breakfast meal is my breakfast scramble. It has everything you need to get your day started right. Eggs, sausage, potato, onion and cheese. Lots of cheese!! Next time I will add in some corn and maybe a little green bell pepper.

Kristina's Breakfast Scramble:

3 eggs, beaten
1/2 tube of sausage (any flavor you like- today was maple)
1 medium potato
onion to taste (I use about 1/3 cup, chopped)
Cheese
Salt and pepper to taste

Brown sausage in a frying pan, breaking it up as it cooks. While it is browning cut the potato into cubes. Once the sausage is cooked, add the potato, chopped onion and salt and pepper. Cover with a lid and let it cook for about 10 minutes. If you need to, add a splash of water to the pan. When the potatoes are soft, scoot all of the contents of the pan to one side. Pour the beaten egg into the cleared side of the pan and scramble, adding it to the meat and potato mix as it cooks. Once done add the cheese and cover till its melted. Yummy!!

Spam Fried Rice

So, it's Christmas day and we are turkey-ed out and the fridge is bare. I decided to put something together with what we had. The recipe below is what I came up with. Pretty good if I do say so myself (and my Japanese boyfriend said it was yummy). I would have done a few things differently if I had the ingredients in the cupboard. Let me know what you think!
Spam Fried Rice:

1 cup cooked rice
Half a can of span, cubed
Diced onions (I would have used green)
1/2 can green beans (I would have used peas)
2 eggs
Soy sauce
Cooking oil
Sesame seeds (I didn't have this but would have added it)

Brown Spam and add the onion and green beans. Set aside and scramble the eggs. In a wok add a few tablespoons of oil and fry the rice. Add a little soy sauce as you turn the rice and sprinkle in some sesame seeds. Once the rice is finished add the spam, green beans, eggs and onions and mix thoroughly. Serves 3-4
